The finishing touch! Grated cheese is perfect for sprinkling or piling on authentic Mexican entrées. Since you'll be using Mexican cheeses, it'll be hard to find it pre-shredded. Also, cheese keeps longer in block form. Always wrap it in fresh tin foil when you refrigerate it.
