MOROCCAN SEASONINGS
The seasonings are not exactly unusual, as most dishes will include things you most likely have in your kitchen already. Cinnamon, ginger, black pepper, sesame seeds, cayenne, paprika, parsley, coriander, mint, basil, garlic, cumin and turmeric are the mainstays of Moroccan cuisine. Nothing that should be too hard to find at your local market. So you will quickly be on your way to cooking Moroccan-style, without having to scour the every souk (market) in Marrakesh. Just remember that in Morocco, these spices are to be used to enhance the flavor of the main ingredients, not mask them. The basic essence of Moroccan food boils down to a few signature elements: harissa, couscous, and tagine.
