GREEK MEAT & FISH
Greeks love meat. Gyros and souvlaki sandwiches are made from slow-grilled, well-spiced lamb or beef or pork, sometimes even chicken. Put on a pita, the meat is usually slathered with tzatziki - a sauce made from yogurt and cucumber - and covered in diced tomato and onion. But in different areas of Greece the toppings vary. Some put ketchup, mustard, or mayonnaise on them. The difference between gyros and souvlaki is that gyro meat is slowly grilled and rotated, while souvlaki meat is on a wooden skewer like a kebob. Otherwise, lamb, chicken, pork, and beef are commonly available and used in countless dishes. Being on the Mediterranean offers a wide variety of seafood, and there are octopus recipes and calamari recipes and recipes for every kind of sea creature imaginable. The Greeks love their seafood.
