ITALIAN HERBS
Most Italian spices and herbs have been successfully adopted by most Americans, so none of this should be all that "foreign" to you. Lots of garlic, and then some more garlic. Basil and pine nuts are used on their own and are combined to make pesto. Onions, rosemary, sage, thyme, mint, oregano, and pepperoncinos are other popular ones, not to mention good old sale (salt) and pepe (pepper).
